How to Make Cotton Cake: A Comprehensive Guide

Cotton cake, known for its cloud-like softness and delicate sweetness, is a beloved treat worldwide. Mastering its simple yet precise recipe ensures a melt-in-your-mouth experience every time. Here’s a step-by-step guide to achieving perfection.

Ingredients:

- 4 large eggs (separated into yolks and whites)

- 60g granulated sugar (divided)

- 50milk

- 50g cake flour (sifted)

- 1 tsp vanilla extract

- Pinch of salt

Steps:

1. Prep: Preheat oven to 160°C (320°F). Line a 6-inch round cake pan with parchment paper.

2. Mix Wet Ingredients: In a bowl, whisk egg yolks, 20g sugar, milk, and vanilla until smooth.

3. Combine Dry Ingredients: Gently fold sifted flour into the yolk mixture until just combined. Avoid overmixing.

4. Whip Egg Whites: In a separate bowl, beat egg whites with salt until foamy. Gradually add the remaining 40g sugar, beating until stiff peaks form.

5. Fold Batter: Gently fold one-third of the egg whites into the yolk mixture to lighten it, then fold in the remaining whites in two batches, using a spatula to retain air.

6. Bake: Pour batter into the pan and tap gently to remove air bubbles. Bake for 30–35 minutes, until golden and a toothpick comes out clean.

7. Cool: Invert the cake and let it cool completely on a wire rack before slicing.

Tips:

- Ensure eggs are at room temperature for better volume.

- Sift flour to avoid lumps and ensure a smooth texture.

- Fold gently to preserve the airiness that gives cotton cake its signature fluff.

Enjoy this versatile cake plain, or top it with fresh fruits, whipped cream, or a dusting of powdered sugar!
