How to Make Minced Eggplant: A Comprehensive Guide

Minced eggplant, a beloved dish across Asia, combines tender eggplant with savory minced meat, creating a comforting and flavorful meal. Here’s a step-by-step guide to mastering it.

Ingredients: 2 Chinese eggplants (or 1 large globe eggplant), 200g ground pork (or chicken/tofu), 3 garlic cloves (minced), 1 tbsp ginger (minced), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1 tbsp cooking wine, 2 tbsp oil, and chopped scallions for garnish.

Steps:

1. Prep the eggplant: Cut eggplants into 2cm cubes. Soak in salted water for 10 minutes to remove bitterness, then pat dry.

2. Cook the meat: Heat oil in a wok over medium-high heat. Add minced pork, breaking it up, and cook until browned (5-7 minutes). Add garlic and ginger; stir-fry until fragrant (1 minute).

3. St-fry the eggplant: Push meat to one side, add eggpieces to the wok. Stir-fry until softened (8-10 minutes). Mix everything together.

4. Season and simmer: Pour in soy sauce, oyster sauce, sugar, and cooking wine. Stir well, then add 2-3 tbsp water. Cover and simmer for 5 minutes until eggplant is melt-in-your-mouth tender.
