For the crust: Mix 100g softened butter, 20g sugar, and 1 egg yolk until creamy. Gradually add 150g all-purpose flour and knead into a smooth dough. Rest for 30 minutes.
For the filling: Combine 200g mixed chopped nuts (walnuts, almonds, sesame seeds, melon seeds, and pistachios), 100g maltose, 50g sugar, 1 tbsp white sesame oil, and 1 tbsp brandy. Stir over low heat until thick. Cool before dividing into 20g portions.
Assembly: Roll the dough into 30g balls. Flatten each, wrap a filling ball inside, and seal. Press into a mooncake mold dusted with flour, then tap out onto a baking sheet.
