Shredded Pork with Egg, or Mu Xu Rou, is a beloved Chinese stir-fry known for its tender meat, fluffy eggs, and crisp vegetables. Here’s a simple guide to making this classic dish.

Ingredients:

200g pork loin (thinly sliced), 2 eggs (beaten), 100g wood ear mushrooms (soaked, sliced), 50g cucumber (julienned), 2 scallions (chopped), 2 cloves garlic (minced). For the sauce: 1 tbsp soy sauce, 1 tsp oyster sauce, 1/2 tsp sugar, 1 pinch white pepper, 2 tbsp water.

Steps:

1. Marinate the pork: Mix sliced pork with 1 tsp soy sauce, 1 tsp cornstarch, and 1 tbsp oil. Let sit for 15 minutes.

2. Prep veggies: Soak wood ear mushrooms until soft, then slice. Julienne cucumber and chop scallions.

3. Cook eggs: Heat 2 tbsp oil in a wok over medium heat. Pour in beaten eggs, scramble until set, then remove.
