Ingredients:

- 500g chicken breast, cubed

- 1 tbsp Shaoxing wine

- 2 tbsp cornstarch

- 3 dried chilies, deseeded (adjust to taste)

- 1 tbsp Sichuan peppercorns

- 1 cup roasted peanuts

- 3 garlic cloves, minced

- 1 piece ginger, julienned

- 1 green onion, chopped

- 1 bell pepper, cubed

- Sauce: 2 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp sugar, 1 tsp sesame oil, ½ cup water.

Instructions:

1. Marinate the chicken: Toss chicken with soy sauce, Shaoxing wine, and cornstarch. Let sit for 20 minutes.
