Classic Baked Cheesy Sweet Potatoes

Start by washing and drying 2 medium sweet potatoes. Pierce them several times with a fork, then bake at 400°F (200°C) for 45–60 minutes until soft. Let them cool slightly, then slice each potato lengthwise and fluff the flesh with a fork. Top with a handful of shredded cheddar, mozzarella, or Parmesan, and return to the oven for 5–10 minutes until the cheese melts and bubbles. Finish with a sprinkle of black pepper or fresh chives.

Creamy Mashed Version
