How to Make Stir-Fried Chive and Pork Shreddes

Stir-fried chive and pork shreds is a quick, delicious Chinese dish loved for its fresh aroma and tender texture. Here’s a simple guide to mastering it.

Ingredients: 200g pork tenderloin, 300g fresh chives, 2 cloves garlic (minced), 1 tbsp soy sauce, 1 tsp oyster sauce, 1 tsp starch, 1 tbsp cooking oil, salt, and pepper to taste.

Steps:

1. Prepare the ingredients: Thinly slice the pork against the grain and marinate in soy sauce, starch, pepper, and 1 tsp oil for 15 minutes. Wash and cut chives into 3-inch sections.

2. Stir-fry the pork: Heat oil in a wok over high heat. Add pork shreds and stir-fry until no longer pink (about 2 minutes). Remove and set aside.

3. Cook the chives: In the same wok, add a little more oil if needed. Sauté minced garlic until fragrant, then toss in chives. Stir-fry for 1 minute until slightly wilted.

4. Combine and season: Return the pork to the wok. Add oyster sauce and a pinch of salt. Stir-fry everything together for 30 seconds until well-mixed.

Tips: For extra flavor, a dash of sesame oil can be added at the end. Serve hot with steamed rice. This versatile dish balances the sweetness of chives with the savory pork, making it a perfect weeknight meal.
