How to Make Dried Shrimp: A Comprehensive Guide

Dried shrimp, a umami-rich staple in Asian cuisine, elevates dishes from stir-fries to soups. Making it at home is simple and ensures freshness. Here’s a step-by-step guide to perfect dried shrimp.

Step 1: Selecting and Cleaning

Choose fresh, firm shrimp with no discoloration. Peel them, leaving the tails on for easier handling. Devein using a toothpick and rinse under cold water. Pat dry thoroughly with paper towels—any moisture can lead to spoilage.

Step 2: Seasoning (Optional)

For extra flavor, marinate the shrimp. Lightly toss with salt (1 tsp per 500g shrimp), a pinch of sugar, or spices like Sichuan peppercorns. Let them sit for 15–30 minutes. Skip this if you prefer plain dried shrimp.

Step 3: Drying

Sun-drying: Arrange shrimp in a single layer on a bamboo tray or mesh screen. Place in direct sunlight for 2–3 days, flipping daily until hard and brittle.

Oven-drying: Preheat to 70°C (160°F). Spread shrimp on a baking lined with parchment paper. Dry for 2–4 hours, checking periodically.

Air-drying: Hang shrimp in a well-ventilated area away from humidity for 3–5 days.

Step 4: Storage

Once completely dry, let them cool. Store in airtight containers or vacuum-sealed bags in a cool, dark place. They can last for months.

Use dried shrimp to make broths, stir-fries, or grind them into seasoning. Homemade dried shrimp offer unmatched flavor and versatility!
