Bitter melon and egg is a nutritious and popular dish in many Asian households, loved for its unique balance of bitterness and umami. Here’s a simple yet delicious recipe to try:
Ingredients:
- 1 medium bitter melon
- 2–3 eggs
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- ½ tsp sugar (optional, to balance bitterness)
- Salt to taste
- 2 tbsp cooking oil
Steps:
1. Prepare the bitter melon: Wash it thoroughly, slice lengthwise, and scoop out the seeds. Cut into thin half-moons. Soak in salted water for 10 minutes to reduce bitterness, then rinse and drain.
2. Cook the eggs: Beat eggs in a bowl with a pinch of salt. Heat 1 tbsp oil in a wok, pour in the eggs, and scramble until lightly set. Remove and set aside.
3. St-fry bitter melon: In the same wok, heat the remaining oil. Sauté garlic until fragrant, then add bitter melon. Stir-fry for 3–4 minutes until tender-crisp.
4. Combine: Return the scrambled eggs to the wok. Add soy sauce and sugar (if using), toss quickly to mix. Cook for 1 more minute. Serve hot with rice.
For extra flavor, you can also add diced ham or a dash of oyster sauce. This dish is not only easy to make but also packed with vitamins, making it a healthy choice for any meal!
