How to Make Taro Coconut Sago Pudding

Taro coconut sago pudding is a beloved dessert with a creamy texture, vibrant color, and natural sweetness. Here’s a simple guide to making it at home.

Ingredients:

- 100g sago pearls

- 1 medium purple taro (about 200g), steamed and mashed

- 400ml coconut milk (fresh or canned)

- 100ml milk (dairy or plant-based)

- 2 tbsp sugar (adjust to taste)

- A pinch of salt

Steps:

1. Cook the sago: Rinse sago under cold water. Bring 500ml water to a boil, add sago, and stir occasionally. Cook for 10-12 minutes until translucent, then cover and let it sit for 5 minutes. Rinse under cold water to remove excess starch.

2. Prepare taro paste: Mash steamed taro until smooth. Mix in coconut milk, milk, sugar, and salt in a saucepan. Heat over medium-low heat, stirring constantly, until the mixture thickens slightly (about 5 minutes).

3. Combine: Add cooked sago to the taro-coconut mixture. Stir gently to ensure even coating. Simmer for 2-3 minutes, then remove from heat.

4. Chill and serve: Let the pudding cool to room temperature, then refrigerate for at least 1 hour. Serve cold, optionally topped with fresh fruit or extra coconut milk.

Tips: For a richer flavor, toast some sago lightly before cooking. Adjust sweetness with honey or maple syrup if preferred. Enjoy this creamy, comforting dessert as a treat on warm days!
