Clams, or "花甲," are a beloved seafood delicacy worldwide, prized for their sweet, briny flavor and quick cooking time. Here’s a simple yet delicious method to prepare them at home.

Step 1: Prep the Clams

Start by soaking the clams in salted water (1 tablespoon of salt per 4 cups water) for 20–30 minutes to purge sand and impurities. Scrub their shells under cold water to remove any grit. Discard any clams with broken shells or those that remain open when tapped.

Step 2: Sauté Aromatics

Heat 2 tablespoons of oil in a wok or large skillet over medium-high heat. Add minced garlic, sliced ginger, and a pinch of dried chili (optional for heat). Stir-fry for 30 seconds until fragrant.

Step 3: Cook the Clams
