Fried dough balls, or "chao ge da," are a crispy, golden Chinese snack loved for their crunchy exterior and soft, chewy center. Here’s a basic recipe to get you started.

Ingredients:

- 2 cups all-purpose flour

- ½ tsp salt

- ¾ cup warm water (or more as needed)

- Oil for deep-frying

- Optional: Sesame seeds, sugar, or a sprinkle of five-spice powder for coating.

Steps:

1. Make the dough: In a bowl, mix flour and salt. Gradually add warm water, kneading until a smooth, firm dough forms. Cover and let it rest for 30 minutes.

2. Shape the balls: Divide the dough into small, marble-sized pieces. Roll each into a ball, then flatten slightly into a thick disc (about 1-inch thick).

3. Fry until golden: Heat oil in a wok or deep pot to 350°F (175°C). Carefully drop in the dough balls, a few at a time, and fry for 3–4 minutes, turning occasionally, until they puff up and turn golden brown.
