Ingredients: For the crust, you’ll need 2 cups all-purpose flour, 1 cup cold butter (cubed), 1/4 cup sugar, and 1/4 tsp salt. For the filling, mix 2 cups diced pineapple (canned or fresh, drained), 3/4 cup sugar, 2 tbsp cornstarch, 1 tsp vanilla extract, and 1 tbsp lemon juice.

Steps:

1. Make the crust: Blend flour, sugar, and salt. Cut in cold butter until crumbly. Add 4 tbsp ice water, mix gently, and form a dough. Chill for 30 minutes.

2. Prepare the filling: Combine pineapple, sugar, cornstarch, vanilla, and lemon juice in a saucepan. Cook over medium heat until thickened (5-7 minutes). Cool completely.
