First, gather your ingredients: 2 cups heavy cream, 1 cup whole milk, ¾ cup cocoa powder, 1 cup sugar, 4 egg yolks, and a pinch of salt. For extra richness, you can add 2 ounces of melted dark chocolate.

Begin by heating the milk and cream in a saucepan over medium heat until it simmers, then remove from heat. In a separate bowl, whisk the egg yolks and sugar until pale. Slowly pour the hot cream mixture into the yolks, whisking constantly to prevent curdling. Return the mixture to the saucepan and cook over low heat, stirring until it thickens enough to coat the back of a spoon.
