Ingredients:

2 fresh corn cobs, 4 cups water, 2 tablespoons sugar (adjust to taste), a pinch of salt. Optional: 1 teaspoon vanilla extract or a splash of milk for richness.

Steps:

1. Prepare the Corn: Remove the husks and silk. Cut the kernels off the cobs, then scrape the cobs with a knife to extract the creamy “milk” (this enhances flavor).

2. Blend: Combine corn kernels, cob milk, and 2 cups of water in a blender. Blend until smooth (1–2 minutes). For extra smoothness, strain through a cheesecloth, though this step is optional for a thicker texture.

3. Cook: Pour the mixture into a pot. Add the remaining 2 cups of water, sugar, and salt. Simmer over medium heat for 10–15 minutes, stirring occasionally, until fragrant and slightly thickened.

4. Serve: Let it cool, then pour into glasses. For a cold treat, chill in the fridge for 2 hours. Add ice cubes or a dollop of whipped cream before serving.
