For the Filling: Mix 200g ground pork with 1 tbsp light soy sauce, 1 tsp sesame oil, 1/2 tsp white pepper, 1 finely chopped scallion, and 1 tsp minced ginger. Stir until sticky; add a splash of water if too dry.
For the Wrappers: Place 1 tsp filling in the center of a wonton wrapper. Moisten the edges with water, fold diagonally to form a triangle, press to seal, then bring the two bottom corners together and press to create a "hat" shape. Repeat until all filling is used.
For the Broth: Bring 4 cups of chicken or vegetable broth to a boil. Cook wontons in batches for 3-4 minutes until they float. Remove and drain.
For the Red Chili Oil: Heat 3 tbsp oil in a pan. Add 2 tbsp chili flakes, 1 tsp Sichuan peppercorns, and 1 crushed garlic clove. Fry until fragrant (30 seconds), then strain the oil.
Assembly: Place cooked wontons in bowls, ladle hot broth over them, and drizzle with chili oil. Garnish with chopped cilantro, peanuts, or sesame seeds. Adjust spice levels by adding more or less chili oil.
