Kaikou Xiao, or "Open-Mouth Laugh," is a crispy, savory snack loved for its unique hollow shape and addictive flavor. Here’s a simple guide to making it at home.

Ingredients: All-purpose flour (300g), salt (1 tsp), sugar (1 tbsp), baking powder (1 tsp), water (150ml), vegetable oil (for frying).

Steps:

1. Mix the dough: Combine flour, salt, sugar, and baking powder in a bowl. Gradually add water while stirring until a soft, smooth dough forms. Knead for 5 minutes, then let it rest for 30 minutes covered with a damp cloth.

2. Shape the dough: Roll the dough into a 1cm-thick sheet. Use a knife or pastry cutter to cut it into 3x5cm rectangles. Gently stretch each rectangle lengthwise and make a small slit in the center to create a "loop."
