Ingredients: 1 cup rice (preferably jasmine or short-grain), 4 cups fish or chicken stock, 500g mixed seafood (shrimp, scallops, crab meat, cleaned and diced), 2 tbsp ginger (minced), 1 green onion (chopped), salt, white pepper, and a drizzle of sesame oil. Optional: a splash of rice wine for depth.

Steps:
