First, prepare the ingredients: 1 kg of mutton (preferably leg or shoulder), 5 slices of ginger, 2 scallions, 3 cloves of garlic, and 1 cinnamon stick. For the sauce, you’ll need 3 tbsp soy sauce, 2 tbsp cooking wine, 1 tbsp sugar, 1 tsp five-spice powder, and a pinch of salt.
