Egg dumplings, or *dan jiao*, are a beloved Chinese dish with a tender, golden wrapper and savory filling. Here’s a simple guide to making them at home.

Ingredients:

- 3 large eggs

- 100g ground pork (or shrimp/vegetables)

- 2 tbsp soy sauce, 1 tsp sesame oil, 1 pinch white pepper

- 1 tbsp starch (for binding)

- Oil for cooking

Steps:

1. Prepare the filling: Mix ground pork with soy sauce, sesame oil, white pepper, and starch. Stir until sticky; set aside.

2. Make egg wrappers: Whisk eggs lightly. Heat a small non-stick pan over medium-low heat. Pour in a thin layer of egg, swirling to cover the pan. Cook until set but still soft (about 30 seconds), then transfer to a plate. Repeat for more wrappers.

3. Shape the dumplings: Place a teaspoon of filling on one end of an egg wrapper. Fold it into a half-moon shape, pressing the edges to seal. Trim any excess wrapper if needed.

4. Cook: Heat oil in a pan. Pan-fry the dumplings over medium heat until golden on both sides (2-3 minutes per side). For extra tenderness, add 2 tbsp of water, cover, and steam for 2 minutes.
