How to Make Shaanxi Youpo Mian: A Step-by-Step Guide

Youpo Mian, a iconic Shaanxi noodle dish, is beloved for its bold flavors and sizzling presentation. Here’s a simple guide to recreate this culinary delight at home.

Ingredients:

- 200g fresh noodles (or thin dried noodles)

- 50g mung bean sprouts (optional, for crunch)

- 3-4 cloves garlic, minced

- 1 tbsp chili flakes (adjust to taste)

- 1 tsp Sichuan peppercorn powder

- 3 tbsp cooking oil

- Seasonings: 1 tbsp light soy sauce, 1/2 tsp dark soy sauce, 1/2 tsp salt, 1 tsp vinegar

Steps:

1. Cook the noodles: Boil water in a pot, add noodles, and cook until al dente (usually 2-3 minutes). Drain and transfer to a large bowl. Toss with 1 tsp oil to prevent sticking.

2. Prepare toppings: Arrange minced garlic, chili flakes, and Sichuan peppercorn powder evenly over the noodles. Top with bean sprouts if using.

3. Make the sauce: In a small bowl, mix light soy sauce, dark soy sauce, salt, and vinegar.

4. Sizzle the oil: Heat oil in a wok or pan until smoking (about 180°C). Carefully pour the hot oil over the garlic and chili flakes—this step releases their aroma and creates a fragrant, spicy oil.

5. Combine: Immediately pour the sauce over the noodles. Toss everything vigorously until well-coated.

Serve hot and enjoy the perfect balance of spicy, savory, and numbing flavors! For extra richness, add a dash of sesame oil or top with chopped cilantro.
