Ingredients for the Crust:

- 200g all-purpose flour

- 100g cold unsalted butter, cubed

- 50g powdered sugar

- 1 egg yolk

- 2-3 tbsp ice water

Filling (Sweet Bean Paste Example):

- 300g red bean paste

- 2 salted egg yolks (optional, for richness)

Steps:

1. Make the Crust: In a bowl, mix flour and powdered sugar. Add cold butter, rubbing with fingertips until mixture resembles coarse crumbs. Add egg yolk and ice water, knead gently into a smooth dough. Wrap and chill for 1 hour.

2. Prepare Filling: Divide bean paste into 15g balls. If using, wrap each salted yolk in bean paste.

3. Assemble: Roll dough into 20g balls. Flatten each, wrap a filling ball inside, and seal. Press into a mooncake mold, then tap out onto a baking sheet.
