Kimbap, Korea’s beloved seaweed rice rolls, are a vibrant, versatile dish perfect for picnics, lunchboxes, or light meals. Here’s a simple guide to crafting this delicious treat.

Ingredients:

- 2 cups cooked short-grain rice, cooled slightly

- 4-5 sheets dried seaweed (gim)

- 1 egg, fried into a thin omelet and julienned

- 1 carrot, julienned and sautéed until tender

- 1 cucumber, julienned and lightly salted

- 200g cooked spinach, seasoned with soy sauce and sesame oil

- 1/2 pound ham or spam, sliced and pan-fried (optional)

- Sesame oil, salt, and sesame seeds for seasoning

Steps:

1. Prepare the Rice: Mix rice with a teaspoon of sesame oil and a pinch of salt. Let cool.

2. Soften Seaweed: Briefly roast each seaweed sheet over a warm pan to make it pliable.

3. Assemble: Place seaweed shiny-side down on a bamboo mat. Spread rice evenly, leaving 1 inch empty at the top.

4. Add Fillings: Arrange fillings (carrot, spinach, egg, cucumber, ham) horizontally in the center.

5. Roll Tightly: Use the mat to roll the seaweed into a tight cylinder, pressing gently to seal.

6. Slice: Brush the roll with sesame oil, slice into 1-inch rounds with a sharp knife.
