Hand-rolled spinach noodles

How to Make Hand-Pulled Spinach Noodles: A Complete Guide

Hand-pulled spinach noodles, vibrant green and packed with nutrients, are a delightful twist on traditional pasta. Here’s a simple guide to crafting them at home.

Ingredients:

- 200g all-purpose flour

- 100g fresh spinach, blanched and chopped

- 1 large egg

- 1 tbsp olive oil

- ½ tsp salt

- 60-80ml warm water (as needed)

Steps:

1. Prepare Spinach Purée: Blanch spinach in boiling water for 1 minute, then blend with 2 tbsp water until smooth. Set aside.

2. Make Dough: In a bowl, mix flour and salt. Add egg, olive oil, and spinach purée. Knead gradually, adding warm water until a smooth, elastic dough forms (about 10 minutes).

3. Rest the Dough: Cover with a damp cloth and let rest for 30 minutes to relax gluten.

4. Roll and Cut: Divide dough into 4 portions. Roll each into a thin sheet (1-2mm thick). Dust with flour, fold, and slice into 2mm-wide strips.

5. Cook and Serve: Bring a large pot of salted water to boil. Add noodles and cook for 2-3 minutes until al dente. Toss with garlic, olive oil, or your favorite sauce.

Tips: For extra flavor, add herbs like basil to the dough. Adjust spinach quantity for color intensity. Enjoy your fresh, healthy noodles!
