How to Make Steamed Cornbread Buns (Xiaowotou)

Xiaowotou, a traditional northern Chinese staple, are simple, healthy steamed buns made from coarse grains. Here’s a concise guide to making them.

Ingredients: 200g cornmeal, 50g all-purpose flour, 150ml warm water, 5g yeast, 10g sugar, a pinch of salt.

Steps:

1. Activate yeast: Mix yeast, sugar, and warm water. Let sit for 10 minutes until frothy.

2. Combine dry ingredients: In a bowl, blend cornmeal, flour, and salt.

3. Knead the dough: Pour the yeast mixture into the dry ingredients. Stir until a shaggy dough forms, then knead for 5 minutes until smooth. Cover and let it rise in a warm place for 1 hour, or until doubled in size.

4. Shape buns: Punch down the dough. Divide into small portions (about 30g each). Roll each into a ball, then gently press a thumb in the center to create a small indent—traditional xiaowotou have a dimpled top.

5. Steam: Arrange buns in a steamer lined with parchment paper (to prevent sticking). Let them rest for 15 minutes. Steam over high heat for 20 minutes. Turn off the heat and let them sit for 5 more minutes before opening the lid.
