How to Make Chinese Walnut Cookies (Xiao Tao Su)

Xiao Tao Su, a beloved Chinese shortbread cookie, wins hearts with its crumbly texture and nutty aroma. Here’s a simple guide to baking this classic treat at home.

Ingredients:

- 150g all-purpose flour

- 50g granulated sugar

- 50g vegetable oil

- 50g lard (or butter for a softer texture)

- 1 egg yolk

- 1/2 tsp baking powder

- 1/4 tsp salt

- 30g roasted walnuts, roughly chopped

Steps:

1. Mix dry ingredients: Sift flour, baking powder, and salt into a bowl. Add sugar and chopped walnuts, stirring evenly.

2. Combine fats: Add vegetable oil and lard to the dry mix. Rub with fingertips until the mixture resembles coarse crumbs.

3. Add egg yolk: Beat the egg yolk lightly and pour it in. Knead gently into a soft dough—do not overwork.

4. Shape: Divide the dough into small balls (about 15g each). Flatten each into a disc, about 5cm in diameter. Optional: Press a walnut piece on top for decoration.

5. Bake: Preheat the oven to 160°C (320°F). Arrange cookies on a baking sheet lined with parchment paper. Bake for 20–25 minutes until golden brown. Cool completely before storing in an airtight container.

Tips: For extra flavor, add a pinch of five-spice powder. Enjoy these crispy, melt-in-your-mouth cookies with tea or coffee!
