How to Make Whole Wheat Mantou: A Simple Guide

Whole wheat mantou, a nutritious twist on the classic steamed bun, are hearty, fluffy, and packed with fiber. Here’s a basic guide to crafting them at home.

Ingredients:

- 200g whole wheat flour

- 100g all-purpose flour (for softness)

- 5g active dry yeast

- 1 tbsp sugar

- 130ml warm water (≈40°C)

- Pinch of salt

Steps:

1. Activate Yeast: Mix yeast, sugar, and warm water. Let sit for 5–10 minutes until frothy.

2. Combine Dry Ingredients: Whisk flours and salt in a bowl.

3. Knead Dough: Pour yeast mixture into flours. Stir until a shaggy dough forms, then knead on a floured surface for 10–15 minutes until smooth and elastic. Add a little flour if too sticky.

4. First Rise: Place dough in an oiled bowl, cover with a damp cloth, and let rise in a warm spot for 1–1.5 hours until doubled.

5. Shape Mantou: Punch down dough, divide into 6-8 equal portions, and roll into smooth balls.

6. Second Rise: Place buns on parchment paper, cover, and let rise for 30 minutes.

7. Steam: Bring a steamer to high heat. Arrange mantou, leaving space, and steam for 15–20 minutes. Turn off heat, wait 5 minutes before opening.
