Chicken floss, or *rousong*, is a versatile and flavorful ingredient loved for its soft, fluffy texture and savory taste. Making it at home is simple with this step-by-step guide.

Ingredients:

500g boneless chicken breast or thigh, 2 bay leaves, 5cm ginger (sliced), 3 cloves garlic (smashed), 2 tbsp light soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1/2 tsp white pepper, and a pinch of salt. For richness, add 1 tbsp butter or sesame oil at the end.

Steps:

1. Cook the Chicken: Boil chicken with bay leaves, ginger, and garlic in water for 20–25 minutes until tender. Drain and let cool, then shred finely with forks or a mixer.
