How to Pan-Fry Yellow Croaker: A Simple Guide

Pan-frying yellow croaker (yellowfish) is a popular way to enjoy this tender, flavorful fish with a crispy golden crust. Here’s a step-by-step guide to perfect results every time.

Ingredients: 2 fresh yellow croakers (cleaned and scaled), 1 tbsp soy sauce, 1 tsp Shaoxing wine, ½ tsp white pepper, 2 tbsp cornstarch, 3 tbsp cooking oil, sliced ginger, and scallions for garnish.

Steps:

1. Prep the Fish: Pat the fish dry with paper towels. Score both sides lightly with a knife to help seasoning penetrate. In a bowl, mix soy sauce, Shaoxing wine, and white pepper; rub the fish inside and out. Let it marinate for 15 minutes.

2. Dredge: Lightly coat the fish in cornstarch, shaking off excess. This ensures a crispy texture.

3. Pan-Fry: Heat oil in a non-stick pan over medium-high. Add ginger to infuse flavor, then place the fish (skin-side down first). Fry for 4–5 minutes until golden, then flip and cook another 3–4 minutes until the flesh is opaque and flakes easily.

4. Serve: Garnish with scallions. For extra flavor, drizzle with a mix of soy sauce, vinegar, and a pinch of sugar.

Tips: Use high-heat oil like canola for crispiness. Avoid overcrowding the pan to maintain even cooking. Enjoy with steamed rice or a light salad!
