Squid, or "炒鱿鱼" in Chinese, is a versatile and delicious dish when prepared correctly. Here’s a simple guide to mastering its preparation.

Step 1: Choose and Clean the Squid

Select fresh squid with clear, shiny eyes and firm flesh. To clean, remove the head, guts, and transparent backbone (quill). Peel off the outer purple membrane, then rinse thoroughly. Cut the body into rings or leave whole for stir-frying. The tentacles can be retained but trimmed.

Step 2: Tenderize the Squid

Squid turns rubbery if overcooked. To tenderize, marinate the squid for 15 minutes in a mixture of 1 tablespoon cornstarch, 1 teaspoon rice wine, and a pinch of salt. This locks in moisture and ensures a tender texture.
