Ingredients: You’ll need 2 cups all-purpose flour, ¾ cup warm water, ½ tsp salt, 2 tbsp cooking oil, and 1 cup finely chopped scallions. Oil for frying is also essential.
Steps:
1. Prepare the dough: Mix flour and salt in a bowl. Gradually add warm water, kneading until a smooth, elastic dough forms (about 10 minutes). Let it rest for 30 minutes covered with a damp cloth.
2. Make the filling: Roll the dough into a log, divide into 6 equal portions, and flatten each into a thin circle. Brush with oil, sprinkle scallions evenly, then roll up like a swiss roll. Coil it into a spiral, flatten gently, and roll into a ¼-inch thick pancake.
3. Cook the pancakes: Heat 2 tbsp oil in a non-stick pan over medium heat. Place the pancake in the pan and cook for 3-4 minutes until golden brown, then flip and cook the other side. Press gently with a spatula for even crispiness.
