How to Make Sweet Fermented Rice: A Simple Guide

Sweet fermented rice, or *jiuniang*, is a traditional Chinese delicacy with a sweet, slightly tangy flavor and soft, chewy texture. Made from glutinous rice, it’s enjoyed warm as a dessert or chilled as a refreshing drink. Here’s a basic guide to making it at home.

Ingredients:

- 2 cups glutinous rice (short-grain)

- 1 teaspoon *qu* (Chinese yeast ball, crushed)

- ½ cup warm water (for activating *qu*)

- 1 cup cool water (for soaking)

Steps:

1. Prepare the Rice: Rinse glutinous rice until the water runs clear, then soak in cool water for 4–6 hours (or overnight). Drain well.

2. Cook the Rice: Steam the soaked rice for 30–40 minutes until soft but not mushy. Spread it on a clean, heatproof surface to cool until warm (around 35–40°C).

3. Activate the Yeast: Crush *qu* into a powder, mix with warm water, and let sit for 5 minutes until a paste forms.

4. Ferment: Combine the rice yeast paste with the warm rice in a sterilized jar or container. Mix gently, ensuring even coating. Press the rice down to eliminate air pockets. Cover with a lid, leaving a small gap for ventilation.

5. Wait: Let it ferment in a warm, dark place (25–30°C) for 24–48 hours. When a sweet aroma develops and liquid forms, it’s ready!

Tips: Use clean utensils to avoid contamination. Adjust fermentation time based on temperature—longer in cooler weather, shorter in warmer climates. Enjoy it plain, with tangyuan, or as a base for smoothies!
