Light cheesecake, known for its silky texture and balanced sweetness, is a beloved dessert. Here’s a simple guide to making it at home.

Ingredients: 200g cream cheese, 100g sugar, 2 eggs, 100g milk, 80g all-purpose flour, 50g melted butter, 1 tsp vanilla extract.

Steps:

1. Prepare the base: Crush digestive biscuits into crumbs (100g), mix with 50g melted butter, and press into a springform pan. Chill for 10 minutes.

2. Mix batter: Beat cream cheese until smooth, gradually add sugar, then eggs one at a time. Stir in milk, flour, vanilla, and melted butter until just combined. Avoid overmixing.

3. Bake: Pour batter over the base. Bake at 160°C for 45-50 minutes until the center is slightly set. Turn off the heat, let it cool in the oven with the door ajar for 1 hour to prevent cracks.

4. Chill: Refrigerate for at least 4 hours (preferably overnight) to firm up.

Tips: Use room temperature ingredients for a smoother batter. Water bath baking (placing the pan in a larger pan of water) ensures even cooking and prevents cracks. Garnish with fresh berries or whipped cream before serving.
