Dry-pot frog legs, a spicy and aromatic Sichuan-inspired dish, are beloved for their tender meat and bold flavors. Here’s a step-by-step guide to mastering this culinary delight.

Ingredients:

500g frog legs (cleaned and cut into pieces), 200g lotus root (sliced), 100g celery (cut into segments), 3 dried chilies, 1 tbsp Sichuan peppercorns, 2 cloves garlic (minced), 1 tbsp ginger (minced), 2 tbsp cooking oil, 1 tbsp broad bean paste, 1 tbsp light soy sauce, 1 tsp sugar, 1 tbsp cooking wine, and a pinch of salt.

Instructions:

1. Prep the Frog Legs: Soak frog legs in salted water for 15 minutes to remove any gamey taste. Rinse and pat dry. Marinate with 1 tsp soy sauce, cooking wine, and cornstarch for 10 minutes.

2. Stir-Fry Aromatics: Heat oil in a wok over medium flame. Add dried chilies, Sichuan peppercorns, garlic, and ginger. Stir-fry until fragrant.
