How to Make Homemade Sausage: A Step-by-Step Guide

Making homemade sausage is a rewarding culinary adventure that allows you to control ingredients and flavors. Here’s a simple guide to get you started.

First, gather your ingredients: 2 lbs of ground pork (or a mix of pork and beef), 2 tbsp salt, 1 tsp black pepper, 1 tsp garlic powder, 1 tsp paprika, and 1 tsp dried herbs (like thyme or oregano). For moisture, add ½ cup ice water.

Begin by mixing the spices and ice water in a bowl. Combine the ground meat with the spice mixture, using your hands to ensure even distribution. Avoid overworking the meat to keep it tender.

Next, choose your casing: natural hog casings (soaked in water) or collagen casings. Rinse casings thoroughly, then slide one end onto a sausage stuffer or a funnel. Carefully feed the meat mixture into the casing, twisting every 4–6 inches to form links.
