How to Make Braised Bamboo Shoots: A Simple Guide

Braised bamboo shoots, or "You M Sun" in Chinese, are a beloved dish known for their savory-sweet flavor and tender texture. Here’s a step-by-step guide to making this delicious treat at home.

Ingredients:

500g fresh bamboo shoots, peeled and sliced into bite-sized pieces

3 tbsp cooking oil

2 tbsp soy sauce

1 tbsp oyster sauce

1 tsp sugar

2-3 sliced garlic cloves

1 sliced green chili (optional, for heat)

1 cup water or vegetable broth

Steps:

1. Prepare the bamboo shoots: If using fresh shoots, boil them in salted water for 10 minutes to remove bitterness. Drain and set aside.

2. St-fry: Heat oil in a wok or deep pan over medium heat. Sauté garlic and chili until fragrant (about 30 seconds).

3. Cook the shoots: Add the bamboo slices and stir-fry for 2-3 minutes until lightly browned.

4. Braise: Pour in water, soy sauce, oyster sauce, and sugar. Stir well, bring to a simmer, then cover and cook on low heat for 8-10 minutes, until the sauce thickens and the shoots are tender.

5. Finish: Uncover and cook for another 1-2 minutes to intensify the flavors. Garnish with sesame seeds or chopped green onions if desired.

Serve hot as a side dish with rice or noodles. This versatile recipe can be adjusted with ingredients like pork belly or mushrooms for extra richness. Enjoy the perfect balance of umami and sweetness in every bite!
