Crispy fried shrimp, or "You Bao Xia" in Chinese, is a beloved dish known for its golden crunch and savory flavor. Mastering this recipe is easier than you think—follow these steps for restaurant-quality results at home.

Ingredients: 300g large shrimp, peeled and deveined; 1 tsp salt; 1 egg white; 2 tbsp cornstarch; 4 cups cooking oil; 3 sliced garlic; 1 sliced chili (optional); 2 tbsp soy sauce; 1 tsp sugar; 1 chopped green onion.

Steps:

1. Prepare the shrimp: Pat dry shrimp thoroughly. Mix with salt, egg white, and cornstarch, then marinate for 15 minutes. This coating ensures a crispy texture.

2. Heat the oil: Heat oil in a wok or deep pan to 180°C (350°F). Test by dropping a cornstarch drop—if it sizzles immediately, the oil is ready.
