How to Make Braised Cabbage with Glass Noodles

Braised cabbage with glass noodles is a comforting, hearty dish popular in Northern China, loved for its simplicity and umami-rich flavors. Here’s a detailed guide to making it at home.

Ingredients: 1/2 head of cabbage (sliced), 100g dried glass noodles (soaked in warm water until soft), 2-3 garlic cloves (minced), 1 tbsp soy sauce, 1 tbsp cooking wine, 1 tsp sugar, a pinch of salt, vegetable oil, and optional chili flakes for heat.

Steps:

1. Prep: Soak glass noodles in warm water for 10 minutes until soft, then drain. Slice cabbage into bite-sized pieces.

2. Sauté: Heat oil in a wok over medium heat. Add minced garlic and stir-fry until fragrant. Toss in cabbage and stir-fry for 2-3 minutes until slightly wilted.

3. Season: Add soy sauce, cooking wine, sugar, and salt. Mix well to coat the cabbage evenly.

4. Simmer: Pour in 100ml water, add the softened glass noodles, and bring to a simmer. Cover and cook for 5-8 minutes, until the cabbage is tender and the noodles have absorbed the flavors.

5. Finish: Uncover and increase heat to reduce the sauce slightly. Adjust seasoning if needed, garnish with chili flakes, and serve hot.

Tips: For extra richness, add a dash of sesame oil or a spoonful of minced pork before simmering. This dish pairs perfectly with steamed rice, making it a satisfying meal any day.
