Jianbing, a beloved Chinese street food, is a savory crepe loved for its crispy texture and flavorful fillings. Here’s a simple guide to making it at home.

Ingredients: For the batter, mix 100g wheat flour, 30g mung bean flour, 2 eggs, 200ml water, and a pinch of salt until smooth. Fillings include scallions, cilantro, crispy fried dough (youtiao), eggs, and optional sauces like chili paste or soybean paste.

Steps:

1. Heat the pan: Use a non-stick griddle over medium heat. Lightly oil it.

2. Pour batter: Ladle a thin layer of batter, swirl to cover the pan evenly.

3. Add egg: Crack an egg on top, spread it with the back of the ladle, and let it set slightly.
