Hand-pulled noodles, or "lamian," are a beloved staple in Chinese cuisine, prized for their chewy texture and fresh flavor. Making them at home is easier than you think—just follow these key steps.

First, prepare the dough. Mix 2 cups of all-purpose flour with ½ teaspoon of salt. Gradually add ¾ cup of warm water, stirring until a shaggy dough forms. Knead on a floured surface for 10 minutes until smooth and elastic, then let it rest in a covered bowl for 30 minutes to relax the gluten.
