How to Make Chinese Meat Dragon (Roulong): A Step-by-Step Guide

The Chinese Meat Dragon, or *Roulong*, is a savory, steamed dish loved for its fluffy dough and flavorful filling. Here’s a simple guide to making it at home.

Ingredients:

For the dough: 500g all-purpose flour, 7g yeast, 300ml warm water, 10g sugar.

For the filling: 300g ground pork, 2 chopped scallions, 1 tbsp ginger (minced), 2 cloves garlic (minced), 2 tbsp soy sauce, 1 tsp sesame oil, salt, and pepper to taste.

Steps:

1. Prepare the dough: Dissolve yeast and sugar in warm water. Let it sit for 5 minutes until foamy. Mix with flour and knead into a smooth dough. Cover and let it rise for 1 hour until doubled in size.

2. Make the filling: Combine all filling ingredients in a bowl. Mix thoroughly and set aside.

3. Shape the Roulong: Roll the dough into a long rectangle (about 0.5cm thick). Spread the filling evenly, leaving a 1cm border. Roll the dough tightly like a swiss roll, then pinch the seams to seal.

4. Steam: Place the Roulong on a parchment-lined steamer. Let it rest for 20 minutes. Steam over high heat for 25-30 minutes. Let it cool slightly before slicing.

Serving Tip: Enjoy it warm with soy sauce or chili oil. Roulong is perfect for breakfast or as a comforting meal!

This dish combines soft, airy dough with a savory pork filling, making it a beloved classic in Chinese cuisine.
