How to Make Snow Skin Mooncakes: A Complete Guide

Snow skin mooncakes, a no-bake treat popular in Southeast Asia, are loved for their soft, chewy texture and refreshing flavors. Here’s a simple guide to making them at home.

Ingredients: For the skin, you’ll need 100g glutinous rice flour, 50g rice flour, 50g sugar, 250ml coconut milk, and 2 tbsp vegetable oil. For the filling, common choices are lotus seed paste, red bean paste, or fresh fruits like mango or durian.

Steps:

1. Prepare the skin: Mix glutinous rice flour, rice flour, and sugar in a bowl. Pour in coconut milk and oil, stir until smooth. Strain the mixture to remove lumps. Steam for 25 minutes until thickened, then let it cool.

2. Make the filling: If using lotus paste, divide it into small balls (about 30g each). For fruit fillings, dice fruits and toss with a little sugar to draw out moisture.

3. Assemble: Dust your hands with rice flour. Take a portion of cooled skin (about 50g), flatten it, and wrap a filling ball inside. Roll into a ball and press gently into a mooncake mold.

4. Serve: Chill in the fridge for at least 1 hour before serving. Store in an airtight container for up to 3 days.

Tips: Adjust sugar levels to your taste. For vibrant colors, add natural food coloring like matcha powder or beetroot juice to the skin. Enjoy this easy, delicious treat during Mid-Autumn Festival or any time of year!
