Ingredients: 1 kg lamb (chopped into 2-inch pieces), 2 tbsp cooking oil, 1 cinnamon stick, 3 star anise, 1 sliced ginger, 3 minced garlic cloves, 2 dried chili peppers (optional), 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp cooking wine, 1 tsp sugar, and water or broth to cover.

Steps:

1. Prepare the Lamb: Soak lamb in cold water for 30 minutes to remove excess blood, then drain and pat dry.

2. Sear the Meat: Heat oil in a heavy pot over medium-high heat. Add lamb and sear until golden brown, then remove.

3. Aromatics: In the same pot, sauté ginger, garlic, and chili until fragrant. Return lamb, then add soy sauces, cooking wine, and sugar, stirring to coat.

4. Braise: Pour in water/broth to cover the meat. Add cinnamon and star anise. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5–2 hours, or until lamb is fork-tender.

5. Thicken (Optional): For a thicker sauce, mix 1 tsp cornstarch with 2 tbsp water and stir into the pot during the last 10 minutes.
