How to Make Flower Cakes: A Simple Guide

Flower cakes, or "huagao," are delicate, fragrant pastries popular in China, loved for their sweet floral flavor and flaky crust. Here’s a basic guide to making them at home.

Ingredients:

For the crust: 200g all-purpose flour, 80g softened butter, 60g sugar, 70ml water.

For the filling: 150g rose petals (fresh or dried), 100g sugar, 1 tbsp honey, 1 tbsp lemon juice.

Steps:

1. Prepare the crust: Mix flour and sugar, add butter, and rub until crumbly. Gradually add water to form a smooth dough. Rest for 30 minutes.

2. Make the filling: Soak rose petals in warm water for 10 minutes, drain, and chop. Mix with sugar, honey, and lemon juice. Simmer over low heat until thick. Cool completely.

3. Shape the cakes: Roll the dough into small balls. Flatten each, add a spoonful of filling, and seal edges. Press gently into a flower shape using a mold.

4. Bake: Preheat oven to 180°C. Place cakes on a baking sheet, brush with egg wash, and bake for 20-25 minutes until golden.

Tips:

- Use edible rose petals for safety.

- Adjust sugar based on petal sweetness.

- Store in an airtight container for up to a week.
