A Guide to Creamy Tomato Potato Soup

Tomato potato soup is a comforting, versatile dish loved worldwide. Here’s a simple yet delicious recipe to master it at home.

Ingredients: 2 large tomatoes (blanched and chopped), 2 potatoes (peeled and diced), 1 onion (finely chopped), 2 garlic cloves (minced), 4 cups vegetable/chicken broth, 1/2 cup heavy cream (optional), olive oil, salt, pepper, and fresh herbs (like basil or parsley).

Steps:

1. Sauté Aromatics: Heat 2 tbsp olive oil in a pot. Sauté onion until translucent, then add garlic and cook for 1 minute until fragrant.

2. Cook Vegetables: Add diced potatoes and cook for 5 minutes. Stir in chopped tomatoes, broth, salt, and pepper. Bring to a boil, then simmer for 15–20 minutes until potatoes are tender.

3. Blend: Use an immersion blender to puree the soup until smooth. For a chunkier version, reserve some potatoes before blending.

4. Finish: Stir in cream (if using) and simmer for 2 more minutes. Garnish with fresh herbs.

Variations: Add carrots for sweetness, bacon for a smoky flavor, or a dash of smoked paprika. Serve with crusty bread for a hearty meal. This creamy, tangy soup is perfect for any season!
