How to Make Hearty Beef and Potato Stew

Beef and potato stew is a comforting, one-pot meal perfect for chilly days. Here’s a simple yet delicious recipe to guide you.

Ingredients: 500g beef (chuck or stewing meat), cut into 2-inch cubes; 4 large potatoes, peeled and halved; 1 onion, diced; 2 carrots, sliced; 3 cloves garlic, minced; 2 tbsp tomato paste; 1 tsp dried thyme; 4 cups beef broth; 2 tbsp olive oil; Salt and pepper to taste.

Instructions:

1. Sear the Beef: Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides. Remove and set aside.

2. Sauté Aromatics: In the same pot, add onion and carrots, cooking until softened (5 minutes). Add garlic and tomato paste, stirring for 1 minute until fragrant.

3. Simmer: Return beef to the pot. Pour in beef broth and thyme, bringing to a boil. Reduce heat, cover, and simmer for 1.5 hours until beef is tender.

4. Add Potatoes: Add potatoes, simmer uncovered for 20–30 minutes until they’re soft and the sauce thickens.
