How to Make Dumplings with Shepherd's Purse

Shepherd’s purse dumplings, a cherished Chinese delicacy, combine fresh greens with savory flavors. Here’s a simple guide to crafting them.

Ingredients:

- 300g shepherd’s purse (cleaned and finely chopped)

- 500g all-purpose flour

- 200g ground pork (or tofu for a vegetarian option)

- 2 eggs, beaten

- 3 cloves garlic (minced)

- 1 tbsp ginger (grated)

- 2 tbsp soy sauce

- 1 tsp sesame oil

- Salt, pepper, and sugar to taste

Steps:

1. Prepare the dough: Mix flour with warm water (about 150ml) until a smooth dough forms. Knead for 10 minutes, then cover and let rest for 30 minutes.

2. Make the filling: Sauté ground pork in a pan until browned. Add garlic, ginger, and beaten eggs, stirring until cooked. Mix in chopped shepherd’s purse, soy sauce, sesame oil, salt, pepper, and a pinch of sugar. Let cool.

3. Shape the dumplings: Roll the dough into thin logs, cut into 2cm pieces, and flatten into circles. Place a spoonful of filling in the center, fold the dough, and pinch edges to seal.

4. Cook: Boil water, add dumplings, and cook until they float (about 3-5 minutes). For a crispier texture, pan-fry boiled dumplings in oil until golden.

Serve hot with vinegar or chili oil. These dumplings offer a perfect balance of earthy greens and umami, making them a delightful meal for any season!
