How to Make Perfect Shrimp Congee: A Step-by-Step Guide

Shrimp congee, a comforting and nutritious Asian staple, is beloved for its silky texture and fresh flavors. Here’s a simple yet delicious recipe to master it at home.

Ingredients: 1 cup rice (preferably jasmine or short-grain), 4 cups water or broth, 200g fresh shrimp (peeled and deveined), 1 tbsp ginger (minced), 1 scallion (chopped), salt, white pepper, and a dash of sesame oil.

Steps:

1. Rinse the rice thoroughly until the water runs clear. Soak it in water for 30 minutes to shorten cooking time.

2. Cook the congee: In a pot, combine rice and water (or broth). Bring to a boil, then reduce heat to low. Simmer for 45–60 minutes, stirring occasionally, until the rice breaks down and the mixture thickens into a porridge-like consistency. Add more water if needed for desired thickness.

3. Prepare the shrimp: When the congee is nearly done, increase heat to medium. Add minced ginger and the shrimp, cooking for 2–3 minutes until shrimp turn pink and opaque.

4. Season and serve: Stir in salt, white pepper, and most of the chopped scallion. Remove from heat, drizzle with sesame oil, and garnish with the remaining scallion. Serve hot.
