How to Cook Spicy Clams: A Step-by-Step Guide

Spicy clams, a beloved seafood dish, are perfect for spice lovers. Here’s a simple yet flavorful recipe to recreate this restaurant favorite at home.

Ingredients:

1 kg fresh clams (soaked in salted water to remove sand), 3-4 dried chilies, 2 cloves garlic (minced), 1-inch ginger (sliced), 2 green onions (chopped), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1 tbsp cooking wine, and vegetable oil for stir-frying.

Instructions:

1. Prep the Clams: Scrub clams under running water and discard any with broken shells. Soak in salted water for 30 minutes, then rinse thoroughly.

2. Stir-Fry Aromatics: Heat oil in a wok over medium-high heat. Add dried chilies, garlic, and ginger. Stir-fry until fragrant (about 30 seconds).

3. Cook the Clams: Toss in clams and increase heat to high. Pour in cooking wine and stir-fry for 2-3 minutes until shells open slightly.

4. Season: Add soy sauce, oyster sauce, and sugar. Mix well and cover for 2-3 minutes, stirring occasionally, until all shells open. Discard any unopened clams.

5. Garnish and Serve: Turn off heat, sprinkle with green onions, and serve hot with steamed rice.

Tips: For extra heat, add a dash of chili sauce. Adjust seasonings to taste. Enjoy this fiery, umami-rich dish in under 20 minutes!
