How to Make Okonomiyaki: A Step-by-Step Guide

Okonomiyaki, a savory Japanese pancake, is a beloved street food loved for its crispy edges and tender cabbage center. Often called "Japanese pizza," it’s customizable and surprisingly easy to make at home. Here’s a simple guide to mastering this dish.

Ingredients (for 2 servings):

- 100g all-purpose flour

- 1 large egg

- 150ml dashi stock (or water)

- 100g shredded cabbage

- 50g tenkasu (tempura scraps)

- 2-3 green onions, chopped

- 50g protein (e.g., sliced pork belly, shrimp, or squid)

- Okonomiyaki sauce, Japanese mayonnaise, aonori (seaweed flakes), and katsuobushi (bonito flakes) for topping.

Instructions:

1. Prepare the Batter: In a bowl, mix flour, egg, and dashi stock until smooth. Avoid overmixing—lumps are okay.

2. Add Vegetables & Protein: Fold in shredded cabbage, tenkasu, green onions, and your chosen protein.

3. Cook the Pancake: Heat a non-stick pan or griddle over medium heat. Pour in the batter, spreading it into a 1.5cm-thick circle. Cook for 4-5 minutes until the edges set.

4. Flip and Finish: Carefully flip the pancake using a spatula. Cook for another 3-4 minutes until golden brown and cooked through.

5. Serve: Transfer to a plate. Drizzle with okonomiyaki sauce, zigzag mayo, and sprinkle with aonori and katsuobushi.

For a Kansai-style (thicker) version, mix all ingredients before cooking. Hiroshima-style layers ingredients separately, including yakisoba noodles. Enjoy this comforting dish hot, straight from the pan!
